FAIRY TALES OF EASTERN EUROPE

This rich collection of folktales reflects the local and regional flavor of the Slavic people, although the same plots, motifs, and structural elements occur in stories told around the world.

For example, in the tale "The Three Golden Hairs," we see the Soudiche, the eastern European equivalent of the greek fate Sisters. A peasant child is ordered to be killed to evade an ominous prophecy, is abandoned to die, but survives to fulfill the dire predictions, much like Oedipus in the play by Sophocles. The endangered child is found in a basket floating down the river, and eventually becomes part of the king's household as does the bliblical Moses. In Shakespeare's Hamlet, a message to kill the hero is secretly changed to save the bearer. An apple tree in this Slavic tale bears "The Fruit of Everlasting Youth," which evokes the Tree of Life in the Garden of Eden. The ages of man described by the Fate Sisters are quite similar to the ancient "Riddle of the Sphinx" A snake impedes the function of the Tree of Everlasting Youth, again reminiscent of Garden of Eden motifs.

There are many more familiar themes in these tales; perhaps the reader will recognize Cinderella in the character of Marouckla, or Rumplestiltskin in the story of Kinkach Martinko. December 10, 2009 marked the date that Donald Pafko was sworn in as Slovak Honorary Consul in Minnesota. After the official Opening Ceremony, Guest of Honor H.E. Peter Burian, Ambassador of the Slovak Republic to the United States was presented with an autographed copy of the book, "Slovak American Touches," by Author, Toni Brendel. Ambassador Burian thanked her for writing the book.

Vdolky

Vdolky is a sweet roll that looks like a flat bismarck but doesn't have jelly inside. It is served with prune filling, cottage cheese, and a dollop of sour cream. Very Slovak.

2 packages dry yeast
1/2 cup water, warm
1 cup milk, scalded
3 tablespoons sugar, divided
2 eggs, beaten
5 cups flour
1 stick butter, softened
1 teaspoon salt

Dissolve yeast in warm water, add milk and sugar. After yeast works, add beaten eggs. Mix remaining ingredients as for pie crust. Add yeast mixture. Work together, kneading well. Set aside and allow to rise. When dough is doubled in bulk, roll out to 1/2 inch thickness. You may use a 2-inch biscuit cutter. Place on lightly greased cookie sheets. Set aside and allow to rise again, almost double in bulk. Heat large electric frying pan to 250-300 degrees.
Very lightly grease the bottom of pan, wiping excess off with paper towel. When dough is ready, lay pieces in fry pan, not too close together. They will continue to rise in pan while cooking. Turn over as each piece browns. Do not cover. Brown both sides and edges. This takes time and cannot be rushed. These also may be baked in the oven.

Vdolky Topping
1 cup sugar, divided
1 heaping teaspoon cinnamon, divided
1 stick butter, melted
2 cups stewed prunes, pitted and mashed
1 carton small curd cottage cheese (16 ounces)
1 carton sour cream (16 ounces)

Toni Brendel's Czech-Slovak heritage is dear to the heart of this Phillips, Wisconsin native. She continues to study and write about the culture of the Slovak people and keeps in close contact with friends and relatives in Slovakia. She is the author of Penfield's Slovak American Touches. Slovak Master Folk Artist, Sidonka Wadina, was raised in a Slovak neighborhood in Milwaukee's Menomonee River Valley. Her grandmothers who emigrated from Slovakia continued to practice the traditional arts of baking and egg decorating. At the age of three, she began to help them especially with the making of Slovak dumplings; now, after a lifetime of preparing Slovak ethnic foods, Sidonka has generously agreed to share with us cherished recipes and original illustrations.

Sidonka's Medovnicky (Slovak Honey Cookies)

4 eggs, beaten well
3/4 pound brown sugar (1 cup)
1 teaspoon vanilla
3/4 cup honey
2 ounces sweet unsalted butter
1 teaspoon baking soda
1-1/4 pounds flour (5 cups)

Mix eggs, sugar, vanilla, honey and butter. Add baking soda and flour; mix well. Let stand in refrigerator (covered) overnight. Roll out, cut into heart shapes, and on greased cookie sheets bake at 400 degrees about 7 minutes. Frost with design pattern. Makes about 4 dozen cookies depending on size.
