3 cups diced, cooked potatoes
4 slices bacon
1 onion, chopped
1/4 cup vinegar
2 Tbs. water
3 Tbs. sugar
1 tsp. salt
Pepper
1 Tbs. minced parsley
Prepare potatoes. Fry bacon, then brown onion in bacon fat. Add vinegar, water, sugar, salt, and pepper and bring to boil. Add potatoes and parsley and toss. Serve hot. Serves 6-8.
